The Reverse Sear Is the Best Way to Cook a Steak, Period | The Food Lab | Serious Eats

  1. Season
  2. Preheat oven to between 200 and 275 F (93 and 135 C)
  3. Place steak/burger/etc. on rack in oven until 10-15F below end temperature
  4. Heat iron skillet at high
  5. Add 1 Tbsp oil once warmed. Once starts to smoke:
  6. Sear steak/burger/etc. in skillet (~45 seconds to two minuets per side)
  7. Serve

Rare: Pull at 105 (40), done at 120 (49) - 20-25 min in oven
Medium Rare: Pull at 115 (46), done at 130 (54) - 25-30 min in oven
Medium: Pull at 125 (52), done at 140 (60) - 30-35 in oven
Medium Well: Pull at 135 (57), done at 150 (66) - 35-40 in oven.
